This recipe utilizes a double boiler method to carefully decarboxylate and infuse the cannabis into the milk, creating a base for your yogurt.

Ingredients:

4 cups Milk: opt for full-fat goat’s milk or homogenized cow’s milk (3.25% MF) for a richer, creamier texture.
1 package Yogurt Starter: choose a high-quality starter culture specifically designed for yogurt making.
3-5 grams Decarboxylated Cannabis: Use small nugs and break them into pieces, avoiding grinding.

Fruit Bottom (optional):

4 cups Fresh or Frozen Berries
½ cup Granulated Sugar
1 tsp Vanilla Extract
2 tbsp Lemon Juice

Instructions:

  1. Decarboxylation & Infusion: Prepare a double boiler by filling the bottom pot with water and bringing it to a simmer. Place the milk and decarboxylated cannabis in the top pot, ensuring the water doesn’t touch the bottom of the pot. Heat on medium until the temperature reaches 175-180°F (79-82°C), stirring frequently. Reduce heat to low and maintain this temperature for 30 minutes, stirring occasionally.
  1. Cooling & Straining: Remove the double boiler from heat and place it in a sink filled with cold water. Stir frequently until the temperature drops to 108-112°F (42-44°C). Strain the mixture through cheesecloth into your yogurt maker’s incubation container, pressing on the cannabis to extract all the liquid.
  1. Activating the Yogurt: In a small bowl, whisk together a few tablespoons of the warm milk with one package of yogurt starter until thoroughly combined. Pour this mixture into the strained milk in the incubation container and stir gently.
  1. Incubation: Cover the incubation container and place it in your yogurt maker. Follow the manufacturer’s instructions for incubation time, typically 4-6 hours.
  1. Cooling & Straining: After incubation, refrigerate the yogurt for up to 6 hours to cool thoroughly.Line a strainer with cheesecloth and place it over a bowl.pour the chilled yogurt into the cheesecloth and allow it to strain in the refrigerator for 24 hours. This will separate the whey from the thicker yogurt.

Creating the Fruit Bottom (Optional):

In a nonstick frying pan, combine the berries, sugar, vanilla extract, and lemon juice. Cook over medium heat, stirring occasionally, until the mixture thickens and bubbles.
Remove from heat and let cool slightly. Spoon the fruit mixture into individual serving containers while it’s still warm and spreadable.

Assembling Your Yogurt:

Once the yogurt has strained, spoon it over the cooled fruit bottom in your serving containers. Store the finished yogurt in the refrigerator for up to one week. The separated whey can be stored separately for up to 3 months and used in smoothies or othre recipes.
